Delicious melt-in-your-mouth treats with a sweet jam centre.

Directions
Preheat oven to 190°C.
Beat butter and sugars on medium speed until well blended. Add egg and almond extract, beating until well combined. then slowly add flour and salt and mix until combined.
Form dough into 10 cm balls and place on baking sheet about 20 cm apart.
Press into the center of each cookie with your finger to make a well. Fill each well with about ½ tsp of jam.
Bake until golden brown on the bottom, about 9-11 minutes.
While the cookies are baking, stir together the icing sugar and 2 tsp lemon juice (or other flavouring; use water if no flavouring). Add additional lemon juice to get a drizzling consistency if desired.
Remove cookies from the oven and drizzle with glaze. Drizzle with additional glaze after the cookies have cooled, if desired.
